“Let’s go apple picking, like Fancy Nancy did, because I want you to bake an apple pie for us?”
This was asked by my older daughter last fall right after we read, “Fancy Nancy Apples Galore”.
That’s right, my girl loved when we read this book together and one of the many reasons Fancy Nancy quickly became one of her kindergarten favorites for reading last year.
Now this year, she has been re-reading Fancy Nancy books all over again (including Apples Galore), but now in first grade she is reading them to me instead of me reading them to her.
But back to the apple picking at hand. Because we all love apples here. As apples are not only tasty, but also quite good for you too with many health benefits, as well.
Sadly, we never got to go last year, which was more a scheduling conflict with soccer and more on our weekends.
But I made my oldest a promise that we would go this year.
And of course, when she was reading Apples Galore to me this time, she reminded me that we indeed had to go apple picking this fall.
And apple picking we most certainly got to finally do a couple of weekends ago.
I also fulfilled the second part of the promise with baking an apple pie for her during one of the days recently that both my girls were in school.
Of course, once it was made I heard from my gang that no apple pie is complete without an ice cream scoop on top.
So apple picking, apple pie and ice cream on top made for a very fun way to usher in fall here.

Now sit back while, I share the recipe that I used now.
Perfect Apple Pie
The perfect apple pie for the fall time!
Ingredients
Crust
- 1 Package Pillsbury refrigerated pie crusts softened as directed on package
Filling
- 6 cups thinly sliced, peeled and cored apples, such as fuji daybreak, Honeycrisp, and Gala (about 6 medium)
- 3/4 cup sugar
- 2 tablespoons all-purpose flour
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 1/4 teaspoon vanilla
- 1 tablespoon lemon juice
Instructions
- Heat oven to 425 degrees F. Place 1 pie crust in ungreased 9-inch pie plate. Press firmly against side and bottom.
- In large bowl, gently mix filling ingredients, spoon into crust lined pie plate. Top with second crust. Wrap excess top crust under bottom crust edge, pressing edges together to seal, flute. Cut slits or shapes in several places in pie crust to make a bit more fancy.
- Bake 40 minutes or until apples are tender and crust is golden brown. Cover edge of crust with 2-3-inch wide strips of foil after first 15 minutes of baking to prevent excessive browning. Cool for at least 2 hours before serving.

I know it truly got so cold overnight here. I looked ahead though and it will be warming up a bit into the high 60s at the very least. We happened to go on a very warm day and felt more like summer still than fall. Hope you get to go soon though 😉

We used to take our girls apple picking every fall. Such a great tradition, although I have to say that the apples were fairly expensive, considering we were picking them (smile…) I made my first pie of the season on Saturday. Nothing beats the scent of apple pie in the oven!

We’re kind of lazy here, Janine. Instead of driving to an apple farm, we want to raise them here and then buy a press and make our own cider. It will take us a couple years but we are determined. 🙂

I love celebrating fall and the best way to do that is being outside picking apples. It looks like everyone had a lot of fun and your apple pie looks really delicious. I bet your house smelled amazing.
After reading about your trip to the apple orchard, I had to see if we had one in Arkansas. I live across from a peach orchard but I had never heard of an apple orchard in Arkansas. I found one and we visited it last Thursday. We too had the best fall weather and the best time picking apples. I highly recommend people searching for one in their area. I made some apple butter as soon as I got home and we at it with biscuits and sausage this weekend. YUM! Nothing better than a sweet and salty biscuit.

We haven’t yet gone this year, but I do love to go apple picking. My mom used to make baked apples, which I’ve gone onto making myself. I’ve made some substitutes over the years, but it’s pretty good: baked apples, black cherry soda and a little flour.

So here’s the thing… I’m a pie person. If some says: Cake or Pie… my response is PIE! Apple is my favourite too!

Apple pie is just such a yummy way to use up all those apples. We ended up making cider with ours…not happening again..way too time consuming for a small result. But what I really want to know is what type of ice cream you have on top. It all looks so delicious!

That pie looks fabulous! And I’m sure it was as delicious as it looks. We have an apple tree where I live and my neighbor’s son got a long pole apple picker and we all got some lovely apples. Not sure what kind they are but I made stewed apples and they taste very good. It would have been fun to go to an apple orchard but we have a supply right here in my own backyard!
