Healthy Baked Mac And Cheese Bites

So here we are, a few short weeks into 2017.

But not going to lie, 2016 went out with a bang of unhealthy habits, eating included.

Therefore, I am trying to find ways to make more time to meal plan for my family to curb our unhealthier habits now.

But even though it is New Year, I still have to worry about a picky eater here.

See, my youngest at 6 years old is still the pickiest of eaters.

So, I still have to make sure that whatever new food recipes I try out keep this in mind.

Also, I can tell you one meal that my littlest picky eater loves, which is mac & cheese. But not only does she enjoy it and I can see why. Because it is purely comfort food.

So during a recent visit to Uncle Giuseppe’s, I found a few different varieties of Borden® Cheese. You can check the store locator to see where to purchase Borden® Cheese near you. Well, I purchased Borden® Cheese Extra Sharp Cheddar Shreds and Borden® Cheese Mozzarella Shreds.

Plus I couldn’t have been more happy as meals are just made better With Borden® Cheese. See I truly feel for my picky eater, as well as for my whole family Borden® Cheese is the essential ingredient that adds just the right amount of love from me to my family.

Baked Mac and Cheese Bites

Now, without further ado, our Baked Mac & Cheese Bites Recipe…

Baked Mac And Cheese Bites
Yield: 0

Baked Mac And Cheese Bites

Cook Time: 15 minutes
Total Time: 15 minutes

A yummy meal even for the pickiest of eaters!

Ingredients

  • 1 cup Borden® Cheese Extra Sharp Cheddar Shreds
  • 1 cup Borden® Cheese Mozzarella Shreds
  • 1/2 pound Elbow Macaroni
  • 2 Tbs. Butter
  • 2 Tbs. Flour
  • 1½ cups milk
  • 2 ounces cream cheese
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 egg beaten

Instructions

  1. First, preheat the oven to 400 degrees F.
  2. Then, spray mini muffin pan with cooking spray.
  3. Next, make sure to cook pasta according to package directions and set aside.
  4. Then in a medium size pan, combine butter and flour over medium heat. You will want to whisk until the butter is melted and the mixture is smooth. Once smooth, slowly add milk. Then, bring to a simmer. Add 1½ cups of the cheeses, cream cheese, salt, and pepper. Stir until smooth and creamy. Remove from heat.
  5. In a large mixing bowl, carefully stir pasta, cheese sauce, and egg until evenly mixed and pasta is evenly coated.
  6. Spoon mac and cheese into mini muffin tins and top each with a small pinch of remaining cheese. Bake at 400 degrees F for 15 minutes or until golden brown. *I use the broiler on high for 2 minutes to brown and make them extra crispy after baking.
  7. Allow to cool 5 minutes before gently removing the bites.
  8. Enjoy!

    My oldest was a crazy picky eater, and she definitely would have eaten these. When you have a little one who won’t eat much, just getting calories becomes important. By the way, she is now 23 and eats a wider variety of foods than I do, so go figure!

    OMG!! I’m making this tonight! I literally had this on my menu for tonight. hehe. That and some baked tofu on the side (eating more vegetarian these days).

    Our picky eater loves Mac & Cheese, too. I’ll often ‘hide’ nutritious ingredients in it, like pureed squash or sweet potato. Love the idea of making little bites like this. I bet they freeze perfectly, too!

      Leslie, I refrigerated a bunch for leftovers and worked fine. So, think the freezer wouldn’t be a bad idea either 😉

    I love Mac and Cheese! If I make this at home I don’t think I’d be willing to share! Hahaha I hope this is available in the imported section at the supermarket. Can be hard to find some US brands here. 🙁

    These look dangerous. Bite sized morsels of mac and cheese goodness. I try to avoid cheese and pasta while watching my weight, but these look a little too good to pass up. I wasn’t a picky eater. I was the kind of kid that was willing to eat anything, so I can only imagine the struggle you might be going through. I’m sure she didn’t have a problem devouring these backed mac and cheese bites 🙂

    Delicious! Cassidy made mac and cheese bites for a birthday party, but they were fried and on a stick. I like the baked idea and I can see doing that for the kids tonight!
    Of course, we use Borden cheese!

    These are genius! I never thought to bake it in a muffin tin. Would have been perfect on those nights we raced from skating to swimming.

      I love the muffin tin idea and I also have used it for taco bowls reverse style. Seriously muffin tins definitely can so be used in more ways that one might even imagine 🙂
