So here we are, a few short weeks into 2017.
But not going to lie, 2016 went out with a bang of unhealthy habits, eating included.
Therefore, I am trying to find ways to make more time to meal plan for my family to curb our unhealthier habits now.
But even though it is New Year, I still have to worry about a picky eater here.
See, my youngest at 6 years old is still the pickiest of eaters.
So, I still have to make sure that whatever new food recipes I try out keep this in mind.
Also, I can tell you one meal that my littlest picky eater loves, which is mac & cheese. But not only does she enjoy it and I can see why. Because it is purely comfort food.

So during a recent visit to Uncle Giuseppe’s, I found a few different varieties of Borden® Cheese. You can check the store locator to see where to purchase Borden® Cheese near you. Well, I purchased Borden® Cheese Extra Sharp Cheddar Shreds and Borden® Cheese Mozzarella Shreds.
Plus I couldn’t have been more happy as meals are just made better With Borden® Cheese. See I truly feel for my picky eater, as well as for my whole family Borden® Cheese is the essential ingredient that adds just the right amount of love from me to my family.
Now, without further ado, our Baked Mac & Cheese Bites Recipe…

Seana Turner says
My oldest was a crazy picky eater, and she definitely would have eaten these. When you have a little one who won’t eat much, just getting calories becomes important. By the way, she is now 23 and eats a wider variety of foods than I do, so go figure!
Janine says
Seana, you seriously just gave me hope for my picky eater when she is a bit older. So thank you for that and more always!! 🙂
Cynthia says
OMG!! I’m making this tonight! I literally had this on my menu for tonight. hehe. That and some baked tofu on the side (eating more vegetarian these days).
That looks yummy! Even we adults can’t get enough of mac n cheese. Hehe.
Sending you hugs and I hope you have a wonderful week, sweet friend! xo
Janine says
Aw, yay and so glad you are able to make this tonight with your veggies, too. And I agree even adults can totally get in on this one. Hugs right back and you and have wonderful week ahead now, too!! xoxo
Leslie says
Our picky eater loves Mac & Cheese, too. I’ll often ‘hide’ nutritious ingredients in it, like pureed squash or sweet potato. Love the idea of making little bites like this. I bet they freeze perfectly, too!
Janine says
Leslie, I refrigerated a bunch for leftovers and worked fine. So, think the freezer wouldn’t be a bad idea either 😉
AnnMarie John says
Madison would LOVE these! She’s the picky eater in my household but she loves mac and cheese and we love Borden cheese. I’ll be trying this!
Janine says
Madison and my youngest would be fast friends on this and so much more. Hope you can try the soon for her now, too 🙂
Jhanis says
I love Mac and Cheese! If I make this at home I don’t think I’d be willing to share! Hahaha I hope this is available in the imported section at the supermarket. Can be hard to find some US brands here. 🙁
Janine says
I hope you can find too and I know what you mean though these were most definitely hard to share! 😉
Jen says
I concur on the whole unhealthy eating habits of 2016, my family was guilty as well! Wow, this looks so good, and something my little people would totally dig! Yum. Thanks for sharing your recipe.
Janine says

Emily says

William Holland says
I was raised on mac n cheese, and I’ll die on mac n cheese. LOL This is one bad eating habit Bev can’t take away from me. 🙂 Happy Monday, Janine!
Janine says
Aw, this one habit I am pretty sure no one could take from me either. So, we most definitely have this in common, too my friend. Happy Monday once again!! 🙂
Mary says
These look dangerous. Bite sized morsels of mac and cheese goodness. I try to avoid cheese and pasta while watching my weight, but these look a little too good to pass up. I wasn’t a picky eater. I was the kind of kid that was willing to eat anything, so I can only imagine the struggle you might be going through. I’m sure she didn’t have a problem devouring these backed mac and cheese bites 🙂
Janine says
She sure didn’t have a problem, Mary. But sadly she does take after me as I was a picky eater as a kid, too though 😉
Carrie Groneman says
Oh Janine, these look fabulous! Mini bites of amazing scrumptiousness and baked too! Thank you for this terrific recipe and how to find all the ingredients; that helps a lot! Keep bringing us these awesome ways to get more healthy and still have the TASTE, you’re always so good at these things. THANK YOU 🙂
Janine says
Thank you so much, Carrie for your kind words and truly hope you get to try these Mac and Cheese Bites soon for your grandkids now 🙂
Tamara says
Delicious! Cassidy made mac and cheese bites for a birthday party, but they were fried and on a stick. I like the baked idea and I can see doing that for the kids tonight!
Of course, we use Borden cheese!
Janine says
Aw, we are so twins with Borden Cheese and more! I hope you, the kids and Cassidy too enjoy these tonight 🙂
Kelly L McKenzie says
These are genius! I never thought to bake it in a muffin tin. Would have been perfect on those nights we raced from skating to swimming.
Janine says
I love the muffin tin idea and I also have used it for taco bowls reverse style. Seriously muffin tins definitely can so be used in more ways that one might even imagine 🙂

Hi Janine, nevermind these for picky eaters, they would go down well in this house with salad for a light lunch. A spring version of a winter comfort food.
