For years, I was big on eating tortilla chips with salsa. But in recent years, I have grown to love freshly made guacamole with tortilla chips. See Mexican food is where it is at for me. Yet, I totally do prefer guacamole to salsa now more often than not when I am enjoying Mexican food here.
See there is just something so refreshing about making my own homemade guacamole with all fresh produce here. See I eat guacamole all times of the year. But I especially eat guacamole during the warmer spring and summer months. Because let’s face it fresh fruits and veggies are just that much better during the warmer weather.
I also happen to love pineapple here. Pineapple is also a favorite of mine in the summer time. I honestly could eat or drink just about anything with pineapple in it! Because it simply reminds me of more tropical weather. So, recently I decided to add pineapple as a way to improve homemade guacamole. What I came up with was nothing short of perfect for the guacamole and pineapple lover that resides in me. Yup, you guessed it. I made Pineapple Guacamole.
And of course guacamole isn’t guacamole without avocados. Because let’s face it that is the key ingredient. But if you do make homemade pineapple guacamole, then you are away that you need to use a good amount of lime juice.
So the acidity in the lime juice helps the avocado from turning colors and stay only a nicer shade of green. Plus, the lime flavor is also just a must with pineapple guacamole.
I also happen to use tomatoes, onion, garlic and even jalapeño for a bit of an added kick to my homemade pineapple guacamole. Trust me, this pineapple guacamole is a favorite in my home. And I can pretty much guarantee, it will also be a favorite for you if you try it.
So what are you waiting for?

Janine,
I love guacamole when it is not so bland and has been kicked up a little bit. Guacamole has no flavor but the pineapple would be perfect.
Thanks for sharing!
HAVE A FABULOUS DAY!
