It is no secret that my family and are true foodies here with the exception of my youngest a.k.a “The Picky Eater”.
My husband and I pretty much love trying new recipes very often here. Plus, we love all sorts of meal recipes, including fun new appetizers.
Plus we are very big on Mexican recipes. But quite often with Mexican food comes the occasional indigestion even from the best of recipes.
Because let’s face it, Mexican food can sometimes be a bit more spicy. While spicy is all good and well tasty wise, it can once again cause a bit of tummy discomfort after ingesting.

Recently, we decided with the warmer weather to make a cold Mexican veggie salsa appetizer to enjoy our Mexican Tortilla chips with. Just like we love guacamole. We happen to also equally love salsa, too for dipping our chips into.
So for a fun twist on Mexican salsa, we made Black Bean and Corn Salsa. We used all store bought ingredients. But a few of the offending and possible heartburn contenders in this recipe include, tomatoes, red onion, red bell pepper and even scallions. As these just sometimes have a way of indeed causing that occasional heartburn to be brought on.

Black Bean & Corn Salsa Recipe
Black Bean and Corn Salsa Recipe
Ingredients
- 15 oz. Can Black Beans, drained and rinsed
- 15 oz. Can Corn, drained and rinsed
- ¼ Medium Red Onion, chopped
- 1 Red Bell Pepper, chopped
- 3 tbsp. Scallions, chopped
- ¼ cup Cilantro, chopped
- ¼ cup Extra Virgin Olive Oil
- 2 Limes, juiced
- ½ tsp. Dried Oregano
- ½ tsp. Smoked Paprika
- Salt and Pepper, to taste
Instructions
- Place black beans, corn, red onion, red bell pepper, scallions and cilantro in a large bowl. Mix thoroughly, set aside.
- Add extra virgin olive oil, lime juice, dried oregano, smoked paprika and salt and pepper to a medium bowl. Mix well until all ingredients are well incorporated.
- Pour liquid mixture over salsa and mix thoroughly so the salsa is evenly coated. If desired, add additional salt and pepper, to taste.
- Cover and refrigerate for at least one hour before serving.
Notes
A serving size is ¼ cup.
