Flashback to a few summers ago

A few years back during one of our summer Disney trips, we were eating breakfast outdoors on the resort’s patio outside the pool area. Chocolate Chip Mickey Pancakes were the breakfast meal of choice for both girls, as well as lemonade.

When all of a sudden out of nowhere, a bumblebee landed on our table. Clearly, the bee was lured over from all the sugary treats on the table. But the screams my girls let out while running for their little lives towards the resort doors were heard for miles. Just as I was about to calm them down, a dragon-fly buzzed by us. You would have thought, I was murdering my kids by how distraught they were at this point. Thankfully, I got them indoors and was able to get the situation mostly under control.

See my girls were afraid of large insects, bees and dragon-flys included. They have since realized that dragon-flys are harmless. But bees are still a bit of another story. I mean I get it as no one wants to get stung by a bee. Moreover, since that experience, my younger daughter actually was stung by a bee at her school’s field day last year. So add more bee trauma to the table.

Yet, they aren’t afraid of fake bees as I have decorated my home for spring-time with Rae Dunn Bee-line collection. On top of it, we are social distancing at home this spring, so I have had to get creative on so many levels. This creativity. includes spring-summer themed desserts or snacks. Plus, these Bumblebee Oreo Truffles would be perfect for homeschooling a science lesson on insects or bees. So, truly perfect recipe tutorial for this time right now overall.

But back to my girls, who love candy, chocolate, and Oreos. So, going with the bee theme, I decided to make Bumblebee Oreo Truffles for our family recently. They were a huge hit even with the two kids that clearly aren’t fans of real-life bees. But the chocolate bee counterparts were not only eaten but devoured.

I used some Oreo Cookies, I had in our pantry, as well as black fondant, cream cheese, yellow candy melts, mini white chocolate chips, and some googly eyes. All ingredients, you can easily have delivered from your local grocery store or Amazon Fresh.

Additional Time: 30 minutes
Total Time: 50 minutes

A fun and absolutely delicious truffles treat made with Oreos to look like Bumblebees.

Ingredients

  • 18 Oreo cookies
  • 4 oz. cream cheese softened
  • 2-3 oz. black fondant
  • 1 ½ cup yellow candy melts
  • 48 miniature white chocolate chips
  • 48 candy googly eyes

Instructions

  1. Line a baking sheet with wax paper and set aside.
  2. Use a food processor to pulse the Oreos into fine crumbs. Bumblebee Oreo Truffles Oreo Crumbles in Food Processor
  3. In a large bowl, mix together Oreo crumbs and cream cheese. Bumblebee Oreo Truffles Process 1
  4. Once ingredients are well-combined, roll out the Oreo mixture into small ovals - about 1 ½ inches long and 1 inch wide. Set each one on a lined baking sheet - you should be able to roll out about 24 truffles.
  5. Refrigerate truffles for at least a half-hour.
  6. As the truffles chill, roll out black fondant until it’s about ¼ of an inch thick. Use a paring knife to cut out 48 small strips, about 2 inches long and ¼ of an inch wide. Bumblebee Oreo Truffles Process 2
  7. Use the remaining fondant to roll out 24 bee stingers: about ¼ of an inch in size each.
  8. Once the truffles are chilled, remove from the refrigerator. Place yellow candy melts in a microwave-safe bowl.
  9. Microwave in 30-second intervals, mixing between each interval, until completely melted.
  10. To assemble one bee: dip ¾ of the Oreo truffle in melted candy. Add 2 stripes on the dipped portion, followed by 2 chocolate chips.
  11. Add one stinger on the end of the truffle. Be sure to work quickly, before the candy melts dry.
  12. Add a drop of candy on the back of 2 eyes and place on the undipped portion of the truffle.
  13. Repeat for every truffle. Allow them to sit for at least 30 minutes. Serve and enjoy!
