Our current reality is truly not the norm and is like we are living in another world or galaxy far, far away.

Daily, we are navigating unchartered territory for sure. Not going to lie, but I am more than overwhelmed by it all. And if this is my current mood, then I can only begin to imagine what my kids are experiencing. 

My younger daughter had to complete a digital time capsule for a school. It consisted of a series of slides that she had to fill in with what she is feeling and doing during this time. Towards the end, she had to write a letter to herself and we (her parents) had to write to her, as well. I read her letter before penning my letter. It was heart-breaking for what she is missing right now. But she also gave herself some hope for what she believes in her heart what she wants after the dust settles. Her words inspired me. 

We are indeed all home all day and night now.

Both my husband and I work during the day, while our girls work on their distance learning with our guidance. Challenges arise daily. But once the evening rolls around, we do our best to turn it all off and tune out. Movie, TV Show nights, as well as family game nights, are now the norm. One of our recent movie nights was watching the latest installment of Star Wars – The Rise of Skywalker.

Thus, the “Galaxy, Far, Far Away reference that opened this article. Star Wars is one of our favorite movie franchises. We raised our girls to share our love of all things Star Wars. 

So, for our recent Star Wars movie night, we made Galaxy Popcorn.

We love popcorn when we watch movies. And this popcorn was not only easy to make, but perfectly themed for the Star Wars movie-themed viewing. I started with popped popcorn. Then, I used grape and berry Jello, as well as black melting chocolate discs. I also topped the Galaxy Popcorn with edible gold stars and silver sugar, too.

The result was Galaxy Popcorn that was indeed popcorn made for a galaxy far, far away!

Galaxy Popcorn

Yield: 7 Cups of Popcorn

Galaxy Popcorn Recipe A Family-Fun Snack Tutorial

An out of this world family and kid-friendly popcorn recipe.

Ingredients

• 3 oz Box of Grape and Berry Blue Jell-O
• ½ Cup Sugar
• ¼ Cup Corn Syrup
• 4 Tbsp Butter
• 7 Cups of Plain White Popped Popcorn
• ¼ Cup Wilton’s Black Melting Discs
• Edible Gold Stars
• Silver Sugar

Instructions

1. In a medium-size saucepan, mix together 1 box of Jell-O, sugar, corn syrup, and butter. Cook over medium heat until it reaches a boil, making sure to stir constantly. 
2. Remove from stovetop and carefully pour mixture over popcorn. This part is easier if your popcorn is in a large bowl, so you have plenty of room. Quickly mix the popcorn with a spoon until all the pieces are evenly coated. *Be careful, the mixture is very hot and could burn you.
3. Pour popcorn onto a parchment-lined cookie sheet, leaving spaces in-between the pieces. 
4. Repeat steps 1-3 for the other box of Jell-O and spoons on the finished popcorn pieces where you left open areas of the other flavor popcorn. This will give the popcorn a blended look.
5. Melt black discs according to package directions. Drizzle over the popcorn.
6. Sprinkle on the silver sugar and gold stars.
7. Let dry for about 15 minutes and then serve!
8. Enjoy!!
