Brownies are a huge hit with my family, especially double chocolate brownies. So much so that we always seem to have Brownies in our home. I do my best to bake homemade brownies as I often as I can for my gang for this reason. But some of the ingredients in brownies are (gasp!) not entirely healthy. One of these ingredients is cooking oil. That is why I have started to bake our brownies with Mazola® Corn Oil instead of regular oil. Gluten-Free Double Chocolate Brownies Recipe
Gluten-Free Double Chocolate Brownies Recipe
A gluten-free, delicious double chocolate brownie recipe for all.
Ingredients
- 1 cup unsweetened cocoa powder
- 1/3 cup coconut flour
- 1/2 teaspoon Argo® Baking Powder, Gluten Free
- 1/4 teaspoon salt
- 3 eggs
- 2/3 cup sugar
- 1/3 cup brown sugar
- 1/4 cup Mazola Corn Oil
- 2 tablespoons butter OR margarine, melted
- 2 teaspoons pure vanilla extract
- 1/2 cup allergy chocolate chips
Instructions
- Preheat oven to 350°F. Spray an 8-inch square baking pan with cooking spray.
- Stir cocoa, coconut flour, baking powder and salt in a small bowl; set aside.
- Combine eggs, sugars, corn oil, butter and vanilla in a large bowl; blend with a wire whisk until smooth.
- Gradually mix in flour mixture.
- Stir in chocolate chips.
- Pour mixture into brownie pan.
- Bake for 25 to 30 minutes or until edges just begin to pull away from sides of pan. Do not over-bake and cool completely.

We actually have that same oil at home. I use it to make healthier shepherds pie. As far as I’m concerned, brownies are a must in life and when you make swaps like this, they are still so delicious.
