A few weeks ago, I shared on one of my Ten Thankful Things weekend posts a picture of a grilled chicken panini and promised to share the recipe here with all.
Well, today is the day that I will indeed post up this awesomely, delicious recipe here.
This one is quite perfect for this time of the year and must admit we are huge fans of panini’s here.
The first time we ever tried one was from our local pizzeria when we first were married. But nowadays, it is so much easier and cheaper for us to make this panini in the convenience of our own home.
in reality, we actually have been making this one for quite sometime and probably should have written it up our recipe sooner here, but I guess it kind of escaped me.
This sandwich is easy to make and indeed fairly inexpensive, too.
I don’t usually make it for the kids to be quite honest, but for the perfect meal for two (they never seemed to take interest in it and this is usually a cheese quesadilla night for them), I can usually keep it between $10-$15 for one meal for us. That is cheaper then going out for a meal at the likes of Burger King or McDonald’s even and definitely healthier for sure.
And yes it is quite tasty, too.
What more could you want from a sandwich?

Grilled Chicken Tomato Mozzarella Panini
I would say not much and if you indeed like to try this panini, please take a look the recipe below now.

Grilled Chicken Tomato Mozzarella Panini
A delicious grilled sandwich
Ingredients
- 1 package, 11 ounce Perdue Thin Sliced Chicken Breasts
- 1 package of Ciabatta Rolls from the Bakery Section of the Supermarket
- 1/2 cup of Balsamic Vinegar
- 1/2 tsp garlic salt
- 1/2 tsp. black pepper
- 2 Tomatoes on the vine, sliced
- 12 oz. Sorrento Fresh Mozzarella Log, sliced
Instructions
- Slice the Mozzarella into thin slices.
- Also, slice the tomato into thin slices, as well.
- On a grilling pan on your stove top, lightly coat with olive oil.
- Season the chicken breasts with garlic salt and pepper.
- Cook the chicken on both sides for at least ten minutes on medium heat or until they are browned and grilled.
- Assemble the sandwiches with making sure to lightly coat the top and bottom of the roll with balsamic vinegar, place one chicken breast next, 4 slices of tomato covering the chicken breast completely, then 4 slices of mozzarella covering the tomatoes slices completely.
- Take the now assembled sandwich and grill lightly on either a panini press or in a toaster oven just enough to melt the cheese and the bun lightly browned and toasted.
- Once done cut in half and enjoy!

We have a George Forman Grill and Panini press pan for the oven, too. So, we have all our bases covered and seriously one of my favorite meals and all started when we got engaged, because the Italian restaurant near us made them and we totally would get the all the time. Then we totally realized doing them ourselves would totally be cheaper!

Tamara, more we have in common, because I love fresh mozzarella. Seriously cannot get enough of it and will tell you a funny side side story. A few years ago, I was making tomato and fresh mozzarella salad for Kevin and I. Usually I will pick out the fresh mozzarella, because I can't help myself. That night I was picking out the tomato, which I could take or leave (Kevin is the tomato lover). I found out the next day that I was pregnant with Emma. My first ever pregnancy craving, lol!! 🙂

Just pinned it. That looks delicious. I have never bought mozzarella like that. Did you have to get it out deli part of the store where they slice it, or it's sold in the cheese section with everything else?
