Walking to the bus stop on a beautiful spring morning, I hear my younger daughter singing Rudolf the Red Nosed Reindeer.
Even though Christmas is clearly over 7 months away, she has Santa and presents still very much on her mind, it would appear.
As much as I couldn’t help, but smile, was also reminded of though how music in general is big in our home.
See music, no matter what time of the year, is a staple for me and my family.
Finally summer and warmer weather, which is truly my favorite time of the year.
As it is indeed getting warmer outside that means more outdoor activities are had and we usually play music outdoors in our backyard, while the girls play on their playground and we hang out on the patio relaxing, grilling great foods, drinking Coca-Cola™ and more.
While we lounge on our backyard patio, we usually enjoy listening to country beach rock, which reminds us of the beach and summer fun.
Also, we have even attended outdoor concerts in the past during summertime.
So again, music plays a big role in our lives all year long, but especially outdoors in the summertime.
But once again so does awesome foods that can be grilled and enjoyed while spending more time outside while again drinking Coca-Cola™ during these outdoor fun-times.
Luckily, while I was recently shopping at our local CVS, I found 20 oz. plastic bottles of the “Share a Coke and a Song” Products purchasing enough Coca-Cola bottles for the adults in my family to enjoy. Honestly, CVS is an absolutely great destination to grab and go 20oz Coca-Cola products.
One such meal we like to make to have with our Coca-Cola is pineapple and coconut shrimp on the grill, which reminds me of the beach, summer sand and just fun times.
See shrimp, in general, happens to be one of my own favorite foods. But pineapple and coconut shrimp on the grill is actually one of my all-time favorite ways to prepare and feast on shrimp here.
So thought I would share my summer, beach and music inspired shrimp recipe here today…
Grilled Coconut and Pineapple Shrimp
A delicious summer-time meal that can be easily served with Coca Cola.
Ingredients
For the Coconut and Pineapple Sweet Sauce
- 3 tbs coconut milk
- 2 tbs honey
- 3 tbs flaked coconut
- dash or paprika and cayenne pepper for taste
For the Grilled Shrimp
- 1/2 lb. fresh or frozen large/jumbo shrimp, peeled and de-veined
- pineapple, cubed
Instructions
FOR THE COCONUT AND PINEAPPLE SWEET CHILI SAUCE
- Mix coconut milk, honey, flaked coconut, paprika and cayenne pepper to make a sweet/hot marinade.
- Add the shrimp to the sweet/hot marinade in a plastic zipper bag.
- Let shrimp sit in the refrigerator in mixture for 2-3 hours.
FOR THE GRILLED SHRIMP
- Skewer the shrimp and pineapple and grill over medium-high heat until cooked, about 3-4 minutes per side.
- Brush the excess sauce onto the shrimp and enjoy with Coca-Cola!
By the way sometimes, while we are eating, I am unsure of a song that may come on while listening and that is when I get my iPhone out to check on Shazam App to help recognize and recall music I may have forgot or even aren’t familiar with. Shazam app is available by the way to download available on iPhone, iPod Touch, iPad, Android and other devices to get your Coca-Cola Share a Song.
So hope you will jam out while enjoying summer eats and Coca-Cola, too. Lastly, don’t forget to download the Shazam App to remember all your summer music playlist favorites, as well!

That recipe is summer in a nutshell! Same with summer music. Nothing like that. I will on occasion go sit inside a venue and enjoy a show, but outdoor lawns and picnics are my thing. I’ll be seeing Toad the Wet Sprocket this summer, but we’re right up front, so no lawn for us!

I listen to all music all of the time except for Christmas music in May. LOL! I’m definitely going to try this recipe next time we grill out. Looks delish. And I have to be the odd man out saying that I prefer Pepsi 😉

Hi Janine, we enjoy hot evenings sat outside listening to music. My songs of summer choice would have to be Don Henley’s Boys Of Summer and Walking On Sunshine by Katrina and the Waves, they just don’t have the same sound at any other time of the year.
