I have made no secret here that I one of my kids is a picky eater. Seriously, she put the “p” in picky eater!
So, I have had to get creative with meal time with her.
But dinner time is when the struggle is real here. There are two things she likes and will give little to no fight with me on eating.Please tell me I'm not the only one with a picky eater? That said, for all the picky eaters out there try this Mac & Cheese Instant Pot recipe now!
One of them is chicken nuggets. I usually use Popcorn Chicken, which is the same that I used for my recent Taco Tuesday night for my picky eater.
The other is Mac and Cheese. She is all about the yellow kind though. You know the one that usually is made with artificial yellow cheese. Seriously, this kid actually lived on this kind of Mac and Cheese for dinner every night on our recent Disney World trip this past summer.
While this is OK I suppose on vacation. At home, I would like to think I can make similar. But only homemade with actual real shredded cheddar cheese, milk, cream cheese, pasta, and other real ingredients, too.
But I honestly don’t have enough hours in the day to prepare and then slave over a hot stove top for Mac and Cheese.
Enter the Instant Pot; seriously this kitchen appliance does it all, especially mac and cheese quickly and easily. Plus, I promise that this mac and cheese recipe is so creamy and tasty, too.
My picky eater eats this one with no fuss, as well. So, I couldn’t resist sharing here as a simple mealtime solution for Mac & Cheese lovers. This recipe could be used on its own as the main course (as my picky eater enjoys it) or as a side dish, too. It, also, can be made for a Thanksgiving or holiday side, as well. So, this instant pot Mac & Cheese is the perfect versatile recipe.

Instant Pot Perfectly Creamy Mac and Cheese Recipe
- 3 cups dry Cavatappi pasta
- 3 ¼ cup water
- ½ teaspoon onion powder
- 1 teaspoon dry mustard
- ¼ teaspoon pepper
- 1 tablespoon butter
- 3 ounces cream cheese
- ¾ cup milk
- 3 cups sharp cheddar cheese, shredded
- Combine first 6 ingredients in Instant Pot inner pot.
- Close the instant pot lid and turn pressure valve to seal. Cook on manual high pressure for 6 minutes.
- Allow for a quick pressure release and then add in the remaining ingredients, stirring in the cream cheese and cheddar cheese to melt with the pasta, and then adding in the milk a little at a time.
