First of all, it is that time of the year for soups and warm meal options. Plus, having owned an Instant Pot for the better portion of a year now, it is also the perfect time to make soups in it.
Moreover, like it or not, it is Thanksgiving time. That means turkey and other foods are going to be leftover in abundance here very shortly.
So, what better time than now to start planning what that leftover turkey will be used for meals-wise.
Therefore, this is where soup, my Instant Pot and that leftover turkey work perfectly together for a kick-butt meal option.
That’s right; I am making Instant Pot Turkey Soup. But not just any turkey soup! Nope, this turkey soup has veggies in it, as well.
With just a few simple add-on ingredients that leftover turkey becomes a purely divine soup dish. You can totally use any leftover turkey broth you have. However, if you don’t have enough you can add store-bought chicken or turkey broth to your Instant Pot. I prefer chicken broth as I think it has more flavor. But that’s just me.
I also add pasta noodles. My favorites are elbows for soups. I also use frozen veggies as these are pretty inexpensive and also easy to use, as well.
But I also like to use fresh chopped onion and celery, too. These two ingredients must be fresh and most definitely not frozen or pre-cut for me.
Lastly, a little butter, salt, and pepper for taste. See the most heavenly leftover turkey soup comes together here!
