Here is the thing in the summer time, I happen to love Key Lime Pie. I am not joking this happens to be my all-time favorite and go-to summer-time pie and food snack. Because limes are just so summer!
But honestly a whole pie can be too much for my family of 4 to consume. Plus, even when I have family or friends over, I find that there is quite often leftover pie.
So, I recently brainstormed this to come up with a better snack solution to still enjoy Key Lime. But to not have so much leftovers, as well as making this dessert that much more kid friendly. I also wanted something that was quick and NO Bake. Because summer time, I want to spend as much time outdoors and not indoors with a hot oven on.
What I came up with is quite ingenious, if I don’t say so myself. Recently, I was shopping at Walmart and bought NILLA Wafers. See my kids and actually my whole family love these cookies. We especially love original flavor. But we also enjoy the lemon NILLA Wafers, too. NILLA Wafers are perfect to snack on alone. But also great to use for fun, easy NO Bake recipes for summer parties, too. See the possibilities with NILLA Wafers at Walmart are endless for all delicious summer recipes. This includes for my Key Lime Cookie Sandwiches.
Then I thought to myself, why can’t I use the NILLA Wafers as a crust/cookie sandwich base. And then I furthermore mused what about adding Key Lime to this mix.

Again, I simply used the NILLA Wafers as the cookie base.
Then, I made a very easy Key Lime Cookie filling by mixing powdered sugar, cream cheese and limes.
Also, this recipe again is NO BAKE. Which is truly a godsend during the warmer summer months. Once again I love not having to turn the oven on in the warm weather whenever possible. And NILLA Wafers, as well as Lemon NILLA Wafers are also a great, quick, no bake solution for the hot summer months.
What I came up with was and is the perfect sweet and sour summer-time cookie Key Lime treat. See I made Key Lime NILLA Wafer Sandwich Cookies. They were a family hit!
So not only will I be making these throughout the summer for my own family. But am also sharing this very easy recipe here for all my blog readers to make, as well.

Key Lime NILLA Wafers Sandwich Cookies Recipe Tutorial
Key Lime NILLA Wafers Sandwich Cookies Recipe Tutorial
Key lime cream cheese filling is sandwiched between two Nilla Wafer cookies in this sweet and sour dessert.
Ingredients
- Cookies
- 1 package NILLA Wafers
Key Lime Cream Cheese Filling:
- 8 0z 8 oz cream cheese softened {light is OK}
- 1/2 cup 1/2 cup powdered sugar
- zest of 3 key limes {1 tbsp approximately}
- juice of 2 key limes {1 tbsp approximately}
Instructions
- Lay NILLA Wafers flat with flat side up.
Key Lime Cream Cheese Filling:
- Beat cream cheese with a stand or hand mixer until completely smooth. Add the powdered sugar and mix until completely incorporated.
- Add the lime juice and zest and mix. Taste and adjust lime if desired.
- Assembly:
- Spread 1 or so tablespoons of cream cheese mixture on flat side of NILLA Wafer. Top with a second cookie.
- Serve immediately.
Notes
Don't assemble cookie sandwiches until just prior to serving.
If you would like to firm up the filling, chill for an hour or so before assembling the sandwiches.

Apple Pie is my go to favorite. If there was a no bake substitute i’d be in trouble. But I do love Key Lime as well, but not much of it. There’s a brand that sells it by the slice in the freezer section and if I really had a taste for it, that’s what I’d get. I love the no bake cookie idea.

Ohh, they look so good! I LOVE NILLA Wafers. I also love key lime pie. I had it in Key West and it originated there, I think, and every shop there says that THEY have the best/original key lime pie of the Keys. Which one REALLY has it best and had it first?

I have actually never been to Key West. But I’d go there just for that if I could. But still glad I was able to recreate Key Lime in bite sized snacks here as I am surely going to be making these all summer long now! 🙂
