Do you love Meringue cookies?

Are you a fan of chocolate chips?

Then you will want to read on now…

Christmas time in my husband’s childhood house was always full of hustle and bustle. So for special celebrations and holiday time, this was especially true.

I still recall the first year I was dating my husband. See I was included in their family celebration. But I was not only welcomed in with open arms, but their home for the holidays was truly inviting.  From the decorations, to the presents, to the holiday foods, it was just a wonderful, good old fashioned Christmas.

One of my mother-in-law’s specialities are called Meringue Teaser Cookies (my husband always just calls them Meringue Chip Cookies).

I had never seen or tasted anything quite like them.  But flashback to that first Christmas with him. These meringue cookies were indeed present.

How can I begin to explain about meringue cookies?

See they are like white sugary crunchy cookies from heaven.  They are for those who have a sweet tooth and love chocolate. I happen to be both and have I mentioned the chocolate?!

Simply put, these cookies are nothing short of amazing.  I have now made them myself from her recipe for our home each holiday time. Why? Because my whole family just loves them.  But then again, I just love to bake cookies during the holidays!

If you don’t believe me, please do try the recipe below.   I dare you not to love these.  One simple thing, you need either a hand mixer or a KitchenAid Stand Mixer. Otherwise, these cookies are fairly straight forward and easy to make.  The waiting is the worst part, but promise it is very much worth it!!

Chocolate Chip Meringue Teasers Cookies Recipe:

Ingredients:

Bit into Chocolate Chip Meringue Cookie

  • 2 egg whites separated and at room temperature
  • 2/3 cup sugar “superfine”
  • 1 teaspoon vanilla
  • 1 package or 6 ozs. of mini chocolate chips
  • pinch of salt

Instructions:

  1. Preheat Oven to 350 Degrees.
  2. Cover Cookie sheets with Aluminum foil.
  3. Beat Egg Whites until foamy. Meringue Cookie Mixing More
  4. Gradually beat in sugar until stiff peaks form (about ten minutes on the highest setting of 10).
  5. Add vanilla and salt. Meringue Cookie Mixing More 5
  6. Fold in chocolate chips. Meringue Cookie Mixing More 6
  7. Drop by teaspoonfuls on foil. Meringue Cookie on Tray 1
  8. Place in oven.
  9. Turn oven off immediately .
  10. Don’t open the oven for at least 6 hours or overnight.

Total Time: 6 hours 10 minutes

An absolutely delicious chocolate chip meringue cookie perfect for the holidays, as well as all year long.

Ingredients

    Sound delicious and love that they are for a good cause too! My mother-in-law is also a great cook and is well into her 80's and still makes it look easy. I have no idea how she does it. I become exhausted just watching her!

      I am with you on this Emily. I did the cooking and the hosting for a week with Hurricane Sandy and was shot afterwards. My MIL does this all the time and it is like no big deal and the more the merrier. Don't get me wrong I love her for it, but man I just don't get it, lol!!

    If you have a KitchenAid Mixer, then regular sugar will work. I ran out of the Superfine sugar with the second batch and tried my regular sugar to find this one out 🙂

      Dara, the mixer really makes this one easier than you could ever imagine. So, I thank god for the device as I can literally let the mixer mix this and do most of the hard work here for me 😉
