Every year at this time, my parents peach tree gives way to a ton of peaches. We definitely could have peaches for weeks, but they do go bad and spoil quickly.
My mom’s solution was to make her homemade peach cobbler. We look forward to this at the end of every summer for years now.
As I am posting this recipe, I actually just had a bite and it is so delicious.
It is seriously my pleasure to share this recipe here with you and hope you try this one real soon now!
Peach Cobbler
A Yummy Summertime Treat
Ingredients
For Filling
- 3 cups peeled and sliced peaches
- 3 tablespoons sugar, more if fruit isn't sweet
- 1 teaspoon cornstarch
- 1/2 teaspoon ground cinnamon
For Topping
- 2/3 cup all-purpose flour
- 1/4 teaspoon baking powder
- Pinch of Salt
- 8 tablespoons 1 stick butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla or almond extract
Instructions
- Preheat oven to 375 degrees. In an 8-inch square pan, toss peaches, 3 tablespoons sugar, cornstarch, ground cinnamon.
- To prepare the cobbler topping, whisk the flour, baking powder and salt together in a small bowl. Set aside.
- Cream butter with sugar in an electric mixer until mixture is light and fluffy. Beat in the egg and vanilla or almond extract. Slowly incorporate the flour, baking powder and salt mixture into the butter-egg mixture using the low setting on the mixer.
- Drop batter by tablespoons over the filling. Uncovered spots will remain, but make open areas small.
- Bake about 35-40 minutes.
- Can serve with whipped cream or ice cream, too.

I looove peach cobbler. I'm one of those weird people who don't like baked fruit. I love fruit and I love dessert, but I don't combine the two. Peaches (and raspberries) are somehow exempt from this weird thing. I also love a good cobbler! My husband whips them up like it's nothing!

I have never been a huge fan of cobblers … but a good crisp! Oh yeah {almost the same thing — less doughy.} I made a blackberry/raspberry crisp the other night for the girls. It was so good.
