Even though my girls are back to school and the unofficial end to summer has occurred here, I am still enjoying grilling, eating and drinking outdoors. Why? Well, for starters it is still warm enough to do so here. Plus, I am always up for trying new recipes that can use our outdoor grill while we still can.
So, that is why I am so delighted to have the chance to cook, eat and drink, too. Now, if I had the chance to cook, drink and eat to win, I have a great recipe that I would love to make. See recently; I was shopping at my local ShopRite. I loaded my shopping cart with all my favorites to make an Asian style, Pineapple Shrimp Fried Rice. This was inspired by ShopRite’s recipe for Grilled Teriyaki Shrimp Skewers paired with Coca-Cola®.
Not only was I so very excited to give this recipe a try but, so was the lady who helped check me out. She actually asked me what I was planning on making with my ingredients. When I shared that I was making Pineapple Shrimp Fried Rice, she literally asked me if she could have some!
Seriously, this recipe is that tasty and uses only the best ShopRite Ingredients. Plus, I was pairing it Coca-Cola. So, cooking, eating, and drinking never tasted better!
First, I prepared the shrimp and pineapple chunks. I love this shrimp is already peeled and deveined. Plus, the pineapple chunks are so juicy, too.
I placed both the shrimp and pineapple chunks in a large gallon ziplock bag. Then, I filled it with the teriyaki sauce. I sealed it closed and made sure the glaze marinated all inside the bag. Twenty minutes later, I placed the teriyaki marinated shrimp and pineapple on skewers. Then I grilled them for about 10 minutes on my pre-heated barbecue grill.
Once they were finished grilling, I came indoors to prepare the rice according to the package instructions.
Then, I heated some sesame oil in my Wok. I transferred the cooked rice to the Wok where I stirred in soy sauce to coat the rice. At this point, I slowly added in the shrimp and pineapple.
After all the ingredients were combined, I turned the heat off.
Finally, it was time to enjoy my Asian inspired Pineapple Shrimp Fried Rice with my Coca-Cola, too!

Pineapple Shrimp Fried Rice
Pineapple Shrimp Fried Rice
An Asian style inspired Shrimp Friend Rice recipe for the whole family.
Ingredients
- 1 lb Wholesome Pantry Raw large shrimpthawed
- 1 bottle ShopRite Trading Company Teriyaki Marinade
- 1 cup pineapple chunks
- metal skewers for BBQing
- 2 cups cooked ShopRite Basmati white rice
- 2 tbs Peanut or Sesame Oil
- 1/2 cup Soy Sauce
Instructions
- Toss shrimp and pineapple chunks with teriyaki marinade in a large bowl and let marinade for 20 minutes. Alternately skewer shrimp and pineapple chunks onto the metal skewers, fitting as many as you can on a single skewer without crowding them.
- Preheat a grill or grill pan to medium-high and once hot, carefully place skewers on grill and grill 1 minute per side, or until opaque. Remove from grill and set aside to cool slightly.
- Remove shrimp and pineapple from skewers.
- Bring 4 cups of water to a boil in a saucepan
- Stir in 2 cups of rice and 2 tbs of unsalted butter.
- Cover and turn down to low heat to simmer until all water is absorbed.
- While rice cooks remove shrimp and pineapple from skewers. Make sure to remove the tail skin from shrimp.
- Then, in a large Wok add 2 tbs peanut or sesame oil.
- Once the oil is heated, add cooked rice and stir in soy sauce.
- Next, mix in shrimp and pineapple.
- Last, but not least enjoy pineapple shrimp rice with your favorite chopsticks!
