Now that Easter is behind us and we are in finally in the month of April, I am warm weather dreaming. I specifically cannot wait to sit outside in our backyard. I also cannot wait for outdoor eating, barbecuing and more.
And yet, as I am getting ready to hit the publish button on this we are having yet another round of snow here in NY on April 2nd! Only yesterday it was almost 65 degrees on Easter Sunday. And today it is barely 40 and snowing. If it was still April 1st, I would swear this was an April Fool’s Day joke. But still, I am hopeful that this is a fluke and warm weather will return again.
So back to the spring and summer menu planning. See sometimes I would much rather just be out in our backyard just chilling with my family rather than actually cooking or grilling on the BBQ.
So, I still love using my slow cooker for those lazy, warmer summer days for that BBQ flavor. Again, warmer weather and BBQ just go hand-in-hand. I honestly love using my slow cooker for pulled BBQ sandwiches! I especially love pulled BBQ Chicken Sandwiches.
See pulled BBQ meat is so easy to make. And yet so tasty, too! Plus chicken is a bit healthier meat overall. So, I absolutely love that I can enjoy the pulled BBQ sandwich, but still use chicken, too.

I mean you just need a few simple ingredients to make simply divine BBQ Pulled Chicken Sandwiches using your favorite slow cooker. This includes chicken breasts, your favorite BBQ sauce, brown sugar, and honey. Plus don’t forget sandwich buns and cold slaw, too!

Sweet & Tangy Pulled BBQ Chicken Slow Cooker Recipe
Ingredients
- 3 Boneless Skinless Chicken Breast
- 1/2 of a small bottle of your favorite BBQ Sauce (I use Sweet Baby Ray's.)
- 1/4 - 1/2 a cup of Brown Sugar, Depending on how sweet you want it.
- 1/4 of a cup of Honey
- Seasoned Salt & Pepper
- Hamburger Buns
Instructions
- Season chicken with salt and pepper.
- Place chicken, BBQ Sauce, Brown Sugar and Honey in Slow Cooker.
- Cook on High for 2-3 hours or low 4-5 hours.
- Transfer to cutting board and with fork pull chicken apart.
- Serve on buns with cold slaw.
- Enjoy!

BBQ chicken says summer to me, and my mouth is watering at the thought of it. I can hardly wait for the day I clean out the woodstove and light my last fire of the year…then it will be time to clean the barbecue and get ready for that first outdoor meal. Yummy!

I don’t eat meat anymore but I do miss bbq, I miss sausage, and brisket but I’ve never been a pulled pork fan. Now pulled chicken? That’s a totally different story. So happy the weather is warming up! It was 80 degrees in Northern California this week 🙂 The girls look adorable in their Easter dresses. I think Mother Nature was pulling an April Fools joke on the East Coast.

Wow that seems so easy. I’m going to have to try it! I wonder if the sugar can be omitted. The barbeque sauce we get already has that sweet taste. I think I’ll try it w/o sugar first.
