Directions
• Heat the oven to a temperature of about 392.0 °F.
• While the oven is heating up, put the sweet potato chunks in the roasting pan and sprinkle over the olive oil, ground cumin, smoked paprika, giving everything a good mix to ensure all the chunks are coated in spices.
• Now season the mixture with salt as well as pepper then roast until cooked(this should take around 25 minutes).
• Meanwhile, heat the remaining oil in the saucepan over medium heat.
• After that, add celery, onions, and carrots and then cook until soft, stirring every now and then.
• Then add the garlic and cook for 1 min more before adding the remaining dried spices alongside tomato puree, mixing the contents of the saucepan well and cooking for 1 min more.
• Thereafter, add the tomatoes, red pepper and water and stir gently.
• Next, bring the chilli to a boil then simmer for 20 mins.
• Now toss in the beans and cook for another 10 mins before transferring in the sweet potato, which you had initially put in the roasting pan.
• Finally, season to taste before serving with rice.
2. Carrot & Coriander Soup

• A large saucepan with cover.

• 1 chopped onion.

Directions
• Heat the vegetable oil in the saucepan before adding onions and frying until softened.
• Next, add the ground coriander and chopped potato pieces and stir well before cooking for 1 minute.
• After that, add the peeled and chopped carrots and the chicken or vegetable stock and bring to a boil before reducing the heat.
• Then cover and cook until the carrots are tender.
• After that, transfer to the food processor with 1tbsp coriander then blitz until smooth. (You may do this in batches if need be).
• Thereafter, return to the pan, add salt if necessary, then let reheat a little bit before serving.
3. Falafel Burgers
Falafel Burgers are not only yummy, and filling, but they are also very healthy with minimal calories. Plus, they are fairly easy to make at home with a meal for four individuals requiring only 16 minutes to do so. The prep and cook times for that are 10 minutes and 6 minutes, respectively. What You Will Need
• Kitchen paper.
• A food processor.
• A non-stick frying pan.

• 1⁄2 tsp chilli powder or harissa paste.

• 1 chopped garlic clove.
