So we made it to January. It has been freezing here daily now for the last few weeks. Also, snowy weather had found us, as well.
Therefore, there isn’t any better time than now to enjoy comfort food. Plus, my crockpot has been getting quite the workout with stews, soups and more. I honestly love that machine this time of the year. Because, I can easily make hot, tasty, versatile and hearty meals.
I also happen to love potato based meals. Add cheese to them and well there is a little slice of heaven!

This is why I can’t resist making cheesy potato casserole in my slow cooker. It is the perfect January, cold weather meal.
My cheesy potato casserole contains potatoes, cheddar cheese soup, french fried onions and more. All of this gets easily added to your crockpot to cook and simmer for a few hours to perfection.

Slow Cooker Cheesy Potato Casserole
Slow Cooker Cheesy Potato Casserole
A rich and hearty potato slow cooker casserole dish.
Ingredients
- 32 oz of frozen diced potatoes, defrosted slightly
- 2- 10.5 oz cans of cheddar cheese soup
- 1 can of evaporated milk
- 3 oz of french fried onions, divided
- 2 teaspoons of minced onions
- 1 teaspoon of ground thyme
- zest of one orange
- salt and pepper to taste
Instructions
- Grease slow cooker with cooking spray.
- Add all ingredients and gently stir. Cover and cook on low for 4-5 hours or high for 2-3 hours until the potatoes are tender.

I have a similar recipe we love and I fix it all the time BUT it does not have orange zest in it. I am a big orange fan and cannot wait to try orange zest in this recipe.
